Grilled Peach, Tofu Ricotta & Arugula Toast

Homemade tofu ricotta spread on your choice of bread, topped with a handful of arugula and grilled peach slices, and seasoned with cracked black pepper and sea salt. If you’re looking for a delicious brunch toast recipe, this one definitely one worth trying! Disclaimer- you don’t need a grill to make this!

Ingredients

  • 1 recipe of my Tofu Ricotta
  • 4 slices bread of your choice (I used thick multigrain bread)
  • Baby arugula
  • Peach slices (keystone peach is best for grilling!)
  • Olive oil

Steps

  1. Make 1 recipe of my easy Tofu Ricotta.
  2. Grill the peaches by tossing them with olive oil and using a grill or a skillet to brown each side.
  3. Assemble the toast as shown below.

FAQ

What kind of peach is best for grilling?

We want to use peaches are crispy and not too soft. We don’t want the peach slices to release juice when grilled! The most highly recommended peach for grilling is keystone peaches.

What type of bread would you recommend using?

Because this toast has many toppings, I would recommend using thick slices of bread. For a healthier than white bread option, opt for whole grain or sprouted grains bread. You can also toast the bread prior to adding toppings if desired.

How long can these toasts be stored?

I would recommend eating these right away once they’re assembled. The tofu ricotta can be stored in the refrigerator for up to a week so you can make that in advance.

What if I don’t have a grill?

I actually don’t have a grill either. For this recipe, I am using a skillet to fry/grill the peach slices, which works just as well.

Ingredients
  

  • 1 recipe of my Tofu Ricotta, link below
  • 2 medium peaches, sliced
  • 1 tbsp olive oil
  • 4 slices thick bread of choice
  • 2 cups baby arugula
  • black pepper
  • sea salt

Instructions
 

  • Make the tofu ricotta according to my Tofu Ricotta recipe. Refridgerate until ready to use.

  • Heat a grill or a skillet on high heat. Toss the peach slices with olive oil. Once the grill or skillet is hot, place on the peach slices and grill for 4-5mins. Flip the peach slices and grill for another 4-5mins. Repeat this step if there is more peach slices to grill.
    2 medium peaches, 1 tbsp olive oil
  • Toast the pieces of bread if desired. Spread the tofu ricotta on each toast, divide the arugula and line 4-5 slices of grilled peach on each toast. Serve with freshly cracked black pepper and sea salt.

Notes

  • These toasts are best served fresh, but can be stored in an airtight container overnight if needed.
