Apples in baked desserts is honestly quite something. I love how apples become soft, sweeter and slightly tangy when baked. Now imaging apples baked with apple pie spices and vegan brown butter!

Ingredients rundown
The brown butter spiced apple filling is made with vegan butter, apple pie spices, maple syrup for sweetness, flour as a thickener, and of course apple slices. The spices include: cinnamon, nutmeg, allspice and ginger. The perfect combination of sweetness, nuttiness and spiciness.
The crumble topping is made with rolled oats, all purpose flour, salt, baking powder, brown sugar and non dairy milk.
What is brown butter?
Brown butter is made through a process called the Maillard reaction. In the simplest scientific terms, the reaction is caused by the interaction of an amino acid and a reducing sugar. Depending on the type of amino acid present in the butter, a slightly different flavour and appearance can be produced.
To create this reaction, the butter must be cooked until just past melting point. The fat component will be slightly “toasted”, which will create the naturally nutty taste and appealing aroma.

Steps
Start by making the vegan spiced brown butter. Melt the butter in a saucepan and simmer until the melted butter is slightly brown. This should take about 8-10mins, depending on the type of butter you use. I tried this recipe with two different vegan butter brands, and one took longer to brown than the other.
Once the butter is brown, remove the pan from the stove. The butter will continue to cook itself with the remaining heat inside the pan. Mix in the maple syrup, flour and spices. Be sure to remove any clumps of flour before adding the apple slices.
The method for making the crumble topping is similar to making scones or biscuits. Start by combining all the dry ingredients in a large bowl. The cold butter will then be crumbled into the dry ingredients. You can use a couple of forks, but I find that using your hands is quickest and easiest! Add nondairy milk to bring everything together.

Transfer the pan of apple slices and spiced brown butter into the baking sheet and make sure the apples are evenly distributed. Use your hands to distribute the crumble topping on top, making sure to cover all areas.
Bake your dish of goodness until the crumbling topping is golden brown. You might be tempted to dive in right away, but I would advise that you wait for the apples/brown butter to stop simmering!

Definitely. Be sure to cover the baking dish with plastic wrap and store in the fridge until ready to bake. You might need to bake for an addition couple of minutes because the apple crumble will be colder.
Yes you can substitute quick oats for rolled oats!

Vegan Brown Butter Apple Crumble
Ingredients
Brown butter spiced apples
- 1 cup vegan butter
- 3 tbsp maple syrup
- 2 tbsp all purpose flour
- ½ tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp allspice
- ¼ tsp ground ginger
- 3 medium apples, or 2 large apples, sliced with skin
Crumble topping
- 1⅓ cup all purpose flour
- ½ cup rolled oats
- ½ tsp baking powder
- pinch of salt
- 4 tbsp brown sugar
- ¼ cup vegan butter, cold and cubed
- 4 tbsp nondairy milk, cold
Instructions
- Preheat the oven to 375ºF and set the oven racks to the middle.
- Make the spiced brown butter apples. In a small saucepan, melt the vegan butter on medium heat. Allow the butter to simmer lightly for 8-10mins, until light brown. Stir frequently and adjust the heat accordingly so that the butter doesn't splat out.
- Remove the saucepan from the stove and whisk in the maple syrup, flour and spices. Be sure to remove any clumps of flour. Fold in the sliced apples and set aside.
- Make the crumble topping. In a mixing bowl, whisk together the dry ingredients under "crumble topping". Using a fork, mix the vegan butter cubes into the dry ingredients until the butter pieces are coated with flour. Now use your hands to crumble the butter pieces into the dry mix. Pour in the nondairy milk and mix with a fork until a slightly moist but crumbly dough forms.
- Transfer the spiced brown butter apple slices into a 9×11 baking dish and evenly distribute the crumble topping on top, making sure to cover all corners.
- Bake the apple crumble for 30-35mins, or until the crumble topping is golden-brown. Allow the dish to cool for at least 5mins before serving with vegan ice cream.
Notes
- When making the brown butter, be sure to monitor the butter closely and mix with a wooden spoon occasionally to avoid the bottom of the pan burning.
- You can leave the skin on for the apples!
- Making the crumble topping uses a similar method as making scones or biscuits. The butter pieces should be no bigger than a pinky finger nail.
- If you prepare the unbaked apple crumble in advance, store in the refrigerator for up to 2 days.
- To store baked apple crumble, cover the dish with plastic wrap and store in the refrigerator.
