Vegan Brown Butter Apple Crumble

Ingredients
  

Brown butter spiced apples

  • 1 cup vegan butter
  • 3 tbsp maple syrup
  • 2 tbsp all purpose flour
  • ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp allspice
  • ¼ tsp ground ginger
  • 3 medium apples, or 2 large apples, sliced with skin

Crumble topping

  • 1⅓ cup all purpose flour
  • ½ cup rolled oats
  • ½ tsp baking powder
  • pinch of salt
  • 4 tbsp brown sugar
  • ¼ cup vegan butter, cold and cubed
  • 4 tbsp nondairy milk, cold

Instructions
 

  • Preheat the oven to 375ºF and set the oven racks to the middle.
  • Make the spiced brown butter apples. In a small saucepan, melt the vegan butter on medium heat. Allow the butter to simmer lightly for 8-10mins, until light brown. Stir frequently and adjust the heat accordingly so that the butter doesn't splat out.
  • Remove the saucepan from the stove and whisk in the maple syrup, flour and spices. Be sure to remove any clumps of flour. Fold in the sliced apples and set aside.
  • Make the crumble topping. In a mixing bowl, whisk together the dry ingredients under "crumble topping". Using a fork, mix the vegan butter cubes into the dry ingredients until the butter pieces are coated with flour. Now use your hands to crumble the butter pieces into the dry mix. Pour in the nondairy milk and mix with a fork until a slightly moist but crumbly dough forms.
  • Transfer the spiced brown butter apple slices into a 9x11 baking dish and evenly distribute the crumble topping on top, making sure to cover all corners.
  • Bake the apple crumble for 30-35mins, or until the crumble topping is golden-brown. Allow the dish to cool for at least 5mins before serving with vegan ice cream.

Notes

  • When making the brown butter, be sure to monitor the butter closely and mix with a wooden spoon occasionally to avoid the bottom of the pan burning.
  • You can leave the skin on for the apples!
  • Making the crumble topping uses a similar method as making scones or biscuits. The butter pieces should be no bigger than a pinky finger nail. 
  • If you prepare the unbaked apple crumble in advance, store in the refrigerator for up to 2 days.
  • To store baked apple crumble, cover the dish with plastic wrap and store in the refrigerator.
