Chinese style noodles cooled and tossed with vegetables and an easy flavourful sauce! This recipe can be made in 20mins or less, and can easily be added to your week’s meal prep.
I love how simple this dish is, and how the simple sauce accompanies the vegetables to provide a variety of flavours to the dish. A notable part of the dish is the chopped nuts! Nuts provide healthy fats and protein, as well as a crunchy texture.
This dish is inspired by the noodle salads that my grandma and my mother would bring with us every time we went on a trip. It’s definitely a money-saver and a nutritious meal to fuel us for our day out.
Ingredients
- Chinese style noodles of your choice (can be thick or thin!)
- Sesame oil to prevent the cooked noodles from sticking to one another.
- Vegetables: cucumber, carrot and red bell pepper)
- Chopped nuts of your choice (I used walnut)
- Green onions
- Sauce: soy sauce, black vinegar, sugar, garlic powder, chili oil)
- Mint leaves (for garnish, optional)
- Sesame seeds (for garnish, optional)

Easy Vegetable Noodle Salad
Ingredients
- 2 servings chinese noodles
- water to cook the noodles
- 3 tsp sesame oil
- 1 medium carrot, peeled and shredded
- 1 small cucumber, sliced
- 1 small bell pepper, sliced
- 2 tbsp green onion, chopped
Sauce Ingredients
- 2 tbsp soy sauce
- 1 tbsp black vinegar
- 1 tsp sugar
- ¼ tsp garlic powder
- ½ tbsp chili oil
Toppings
- 2 tbsp mint leaves, for garnish
- chopped nuts, such as peanut or walnut
- sesame seeds
Instructions
- Cook the noodles according to package instructions. Drain and toss with the sesame oil. Refridgerate until cold.2 servings chinese noodles, water to cook the noodles, 3 tsp sesame oil
