Refreshing and spicy booze-less drink with pineapple juice, carbonated water and an easy ginger syrup. This drink is both sweet and mildly spicy, which is a nice and cool drink for adults and kids alike to enjoy this summer!

Ingredients for ginger syrup
For the ginger component of the drink, we’ll be making a simple ginger syrup to top off the drink. To make the syrup, all you have to do is simmer ginger powder, granulated sugar and water in a saucepan. See the steps in the following images:
Easy steps
Besides the ginger syrup, there is also pineapple juice, carbonated water and ice in this mocktail. To put together the drink:
- Fill a glass with ice cubes. The size of ice cubes is up to you, but I recently got an ice cube tray that make mini ice cubes, which I find accompanies drinks really well.
- Pour in the pure pineapple juice with preferably no sweetener added, because the natural sweetness of pineapple is enough to sweeten the drink (plus the ginger syrup).
- Fill the remainder of the glass with carbonated water. I find that a brand new bottle of carbonated water is generally fizzier than a bottle that’s been opened before.
- Drizzle on the ginger syrup, and give the drink a stir before sipping! If you’d like, you can put a slice of fresh pineapple on the rims of the glasses.

Pineapple Ginger Mocktail
Ingredients
- 1 cup pure pineapple juice, divided
- 1 cup carbonated water, divided
- ice cubes
Ginger syrup
- 1 tsp ginger powder
- 2 tbsp granulated sugar
- 3 tbsp water
- Fresh pineapple slices for garnish, optional
Instructions
- Make the ginger syrup by adding the ingredients under "ginger syrup" to a small saucepan, stirring and simmering on medium heat for 3 minutes. Remove from heat to allow the syrup the thicken and cool.1 tsp ginger powder, 2 tbsp granulated sugar, 3 tbsp water
- Meanwhile, fill two medium sized glasses with ice cubes. Pour 1/2 cup of pineapple juice in each cup. Fill the remainder of the glass with carbonated water.1 cup pure pineapple juice, ice cubes, 1 cup carbonated water
- Divide the drink between two glasses and drizzle on the ginger syrup. Insert slices of fresh pineapple if you're using and serve with (prefeable reusable) straws!Fresh pineapple slices for garnish
