Refreshing salad with red apple, green grapes, blueberries, kiwi and an assortment of nuts. This is fruity and nutty salad is a perfect treat for the summer!
This recipe is completely customizable in terms of your choice of fruits and choice of nuts. I can’t say that any combination of fruits and nuts will fit nicely, but it never hurts to experiment and try! The addition of mint and lime juice adds extra freshness and flavour to the salad.
Salad ingredients
- Diced red apple
- Small kiwi
- Seedless green grapes
- Blueberries
- Fresh mint (mine is homegrown)
- Freshly squeezed lime juice
Your choice of nuts (I used almond, cashew, hazelnut and walnut)
- Almond
- Pistachio
- Pecan
- Walnut
- Cashew
- Peanut
- Hazelnut
- Pine nuts
How to pick fresh fruits
Here are general tips for picking fresh fruits for the salad, because the last thing we need is a bruised or blemished fruit ruining the salad!
- Look for bruises on the fruit (any dark marks or unevenness)
- Feel the fruit if you can. For most fruits, you want to pick one that’s not mushy or too soft.
- The colour of the fruit is important. Look for bright and vibrant coloured fruits.
- It is said that good fruits has a shiny outside.
- Avoid fruits that are crushed, has wrinkles or scratches.
To make the salad
- All you have to do is wash, cut the fruits and toss everything together with lime juice and top with mint!
I would suggest leaving the fruits and nuts un-tossed until ready to serve (to preserve freshness).

Fruits & Nuts Salad with Fresh Mint and Lime Juice
Ingredients
- 1 small apple, diced
- 1 cup green grapes, cut into halves
- 1 cup blueberries
- 2 small kiwis, peeled and diced
- 1 cup your choice of nuts (see above for list)
- Juice of 1 lime
- Fresh mint leafs
Instructions
- Combine all the fruis and nuts in a large bowl
- Squeeze in the lime juice, add the fresh mint and serve cold.
Notes
- Eat the salad fresh or refrigerate for no more than 24hrs.
