Easy-to-make vegan milkshake blended with homemade strawberry rhubarb sauce. Make your own milkshake at home with just a few ingredients.
Ingredients
- Fresh strawberries (big and shiny)
- Fresh rhubarb (bright red is the best!)
- Granulated sugar
- Lemon juice
- Vegan vanilla ice cream (any brand is okay)
- Non-dairy milk (you might want to choose one that the ice cream is made with to avoid flavours clashing)
Optional (but highly recommended) toppings:
- Coconut whipped cream (store bought or make your own by beating together coconut cream and icing sugar)
- Fresh sliced strawberries

Make the strawberry rhubarb sauce:
- Combine all the ingredients in a small saucepan.
- Bring mixture to a boil and simmer.
- You can lightly mash the strawberries and rhubarb pieces to release its juice.
- Cool completely before blending with the other ingredients.
Blend the sauce, ice cream and plant milk in a high speed blender until smooth. Serve with toppings if desired.

FAQ
Rhubarb is a stalk species that has a tart taste. It is mostly used in sweet dishes to counter the sourness. You can eat the rhubarb stalk raw, but the leaves of the rhubarb is poisonous.
If your rhubarb comes with its leaves, be sure to remove them first. Similar to celery, all you have to do is wash the stalks of rhubarb, cut off any rotting tips and dice them into medium-small pieces.
I would not recommend you do, as it may clash with the flavours of the strawberry rhubarb purée. Vanilla tends to go well with anything, so that is the flavour I recommend using.

Strawberry Rhubarb Milkshake (vegan)
Ingredients
Strawberry-rhubarb sauce
- 1 cup strawberries, leaves removed and diced, or 4 large strawberries
- 1 stalk rhubarb, diced
- ¼ cup granulated sugar
- 1 tbsp lemon juice
Milkshake
- 1 pint vegan vanilla ice cream, (1 pint=2 cups)
- 1 cup plant milk
Toppings (optional
- coconut whipped cream
- sliced fresh strawberries
Instructions
- Add all the ingredients under "Strawberry-rhubarb sauce" into a small saucepan. Turn the stove to medium-high and bring the mixture to a boil. Reduce heat to medium-low and simmer the mixutre for 10-12mins, stirring frequently to avoid the bottom burning. You can slightly crush the strawberry and rhubarb pieces with a fork. Remove from the heat and allow the mixture to cool completely. To speed up the cooling process, store the purée in another bowl and place it in the refrigerator.
- Once the strawberry rhubarb sauce is completely cool, add the ice cream, plant milk and ¾ of the purée into a high speed blender. Blend until smooth.
- To serve, smear the remaning strawberry rhubarb sauce in two medium glass, pour in the milkshake and top with coconut whipped cream and more strawberries.
Notes
- The sauce doesn’t have to be entirely smooth, as it will be blended with the remaining ingredients.
- For a less sugary drink, use unsweetened plant milk.

Can you exchange fresh for frozen rhubarb in this recipe? Rhubarb is currently not in season.
Hi Tiffany, yes you can! Frozen rhubarb definitely works for making the strawberry rhubarb sauce. It’ll just take slightly longer to thaw the rhubarb. 🙂
