These soft and chewy vegan French toasts are fried with naturally sweetened raspberry-infused French toast batter, and topped with a simple lemon drizzle!
Take your French toast game to the next level with this simple yet sophisticated recipe that combines two of summer’s most favourable fruits- raspberries and lemons.
French toast is usually made with an egg-based batter, which makes the bread toasty on the outside and soft on the inside. For this veganized version, the batter will provide just as much texture. Read on to see which ingredients we are using for the French toast batter!
Ingredients
- Your choice of thick bread – I like to use sourdough, multigrain, or a combination of both.
The French toast batter consists of:
- Non dairy milk – I would recommend using soy or cashew milk, as they are relatively creamier compared to other plant-based milks!
- Melted vegan butter – preferably not margarine, and preferably unsalted.
- Flax meal – the main egg replacer! Flax seed becomes slimy when soaked in liquids, which is perfect for binding the toast mixture together.
- Mashed fresh raspberries (plus more fore topping) – you can mash the raspberries manually, or use a blender
The lemon component:
- Juice of 1/2 a lemon is whisked with icing sugar to create a simple lemon drizzle that’ll sweeten the toast.
- Optionally, top your French toast with fresh lemon zest
How to make vegan French toast
Start by mashing your fresh raspberries in a small bowl
Make your vegan French toast batter by whisking together the non-dairy milk, melted vegan butter, mashed raspberries, and flax meal. Use a shallow bowl for easier dipping. Allow the batter to thicken for 5mins.
Dip a slice of thick bread of your choice into the French toast mixture. Let the first side of the bread soak for a few seconds. Flip the bread and soak the other side for a few more seconds.
Transfer the dipped bread onto a heated non-stick skillet. Fry the first side for 2 mins. Carefully flip the toast and fry the other side for 2 mins. Transfer to a cooling rack to cool, or a serving plate to eat immediately.
To make the lemon drizzle, simply combine the lemon juice and icing sugar until there are no clumps of sugar left.
Serve your toast with more fresh raspberries, the lemon drizzle, and lemon zest!
FAQs
Yes you can. You will need to thaw the raspberries completely before being able to mash them for the fresh toast mixture.
I would highly recommend you use freshly squeezed lemon juice as it has more flavour, and the taste is overall better, but if you must, store-bought lemon juice will not affect the recipe.
Unfortunately the batter will become too thick and dense if it is left for a long time, so I would not advise pre-making the batter.

Vegan Raspberry Lemon French Toast
Ingredients
- 4-6 slices thick bread of your choice
- 1 cup non dairy milk
- 2 tbsp vegan butter, melted
- 1 tbsp flax meal
- 1 cup raspberries, divided
- Juice of ½ lemon, about 2 tbsp
- ½ cup icing sugar
- Lemon zest for serving
Instructions
- In a small bowl, mash ½ cup of the fresh raspberries.
- In a large shallow bowl, whisk together the non dairy milk, melted butter, flax meal, and mashed raspberries. Let the French toast batter thicken for 5 mins.
- In a small bowl, whisk together the freshly squeezed lemon juice and icing sugar to create the lemon drizzle. Refrigerate until ready to use.
- Heat a non-stick skillet on medium heat. Meanwhile, coat both sides of a slice of bread with the French toast mixture.
- Transfer the dipped bread onto the heated skillet. Fry the first side of the toast for 2mins. Reduce the heat to medium-low, flip the toast and fry the other side for 2mins. Transfer the cooked French toast onto a serving plate. Repeat until all slices of toast are cooked.
- Serve the French toast with the remaining ½ cup of fresh raspberries, fresh lemon zest, and lemon drizzle.
Notes
- If the French toast batter becomes dry before you have coated all slices of bread, add 1 tbsp of non dairy milk to the mixture and proceed.
- The fresh toast is best served and consumed immediately. Should you have leftovers and need to reheat, microwave the toast on high for 25-30s.
