Caramel-Apple Banana Bread (Vegan)

I’m sure you’ve all had the chance to bake some sort of bread during the pandemic. Whether it’s sourdough bread or focaccia bread, for some reason bread is one of the at-home food trends that everyone’s been taking part in. Banana bread is one of the “breads” that everyone loves to make, though some would argue that banana bread shouldn’t be considered “bread” because there is no rising process and no yeast involved. Regardless, I am here to show you that you can make incredibly fluffy and chewy banana bread WITHOUT having to add eggs! You heard me right, this banana bread is VEGAN.

Caramel-Apple Banana Bread (vegan)

In this recipe we are making banana bread with a carnival-vibe twist- we’re adding diced apple and homemade caramel sauce! I cannot get enough of this flavour combination. If you haven’t tried caramel & apple, you’re missing out! I think this might be my favourite banana bread variation.

Here are the general steps to making this caramel-apple banana bread:

  1. Mass the banana and mix with the wet ingredients 
  2. Sift in the dry ingredients and mix
  3. Fold in the apple
  4. Pour the batter into a loaf pan with a layer of caramel sauce in between
  5. Bake and top with optional toppings (see below)

There are so many reasons why I love this recipe but here are just a few:

  • The addition of diced apples into the batter adds a nice texture and tart flavour to the banana bread.
  • Layering the caramel sauce inside the loaf allows the batter to absorb the sauce and create a nice caramely layer.
  • The overall taste of the caramel-apple banana bread is sweeter, but it’s perfect for dessert!
  • I cannot exaggerate how fluffy the bread is! Best part is, no eggs or milk were involved in the making of this beautiful loaf.

Caramel-Apple Banana Bread (Vegan)

Ingredients
  

  • 4 ripe bananas
  • ½ cup brown sugar
  • ¼ cup vegetable oil
  • ¼ cup plant milk
  • 2 tsp vanilla extract
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 small red apple, finely diced
  • ¼ cup vegan caramel sauce

Toppings (optional)

  • 1 banana, sliced horizontally
  • A few pieces of diced apple
  • 2 tbsp vegan caramel sauce*

Instructions
 

  • Preheat the oven to 350ºF and flour & oil a 9×5” loaf pan.
  • In a large bowl, mash the bananas. Whisk in brown sugar, oil, milk and vanilla extract.
  • Put a sift over the large bowl and sift in the flour, baking soda and salt.
  • Mix everything together using a wooden spoon until just incorporated.
  • Add the diced apples and fold the mixture until combined. Do not overmix.
  • Pour half of the batter into the loaf pan and make sure it covers the whole surface at the bottom of the pan. Drizzle on the ¼ cup of caramel sauce evenly on top of the batter. Pour in the remaining batter and smooth everything out. 
  • Top with the optional toppings (except the caramel sauce). Cover the loaf pan with aluminum foil and bake for 45mins.
  • Remove from the oven and remove the foil. Bake at the same temperature for another 10-15mins. To test if the banana bread is cooked, insert a toothpick into the middle of the loaf and if it comes out clean, it is cooked. If there is raw batter on the toothpick, add additional 5mins at a time.
  • Once cooked, remove the loaf from the oven and cool for 5mins before removing from the loaf pan. Drizzle on the optional 2 tbsp of caramel sauce. 

Notes

  • When sifting the flour, there is no need to remeasure after sifting. You can just sift all the dry ingredients straight into the bowl of wet ingredients.
  • When mixing the batter, be sure to get rid of any clumps of flour.
  • After the banana bread is baked, you may not notice the layer of caramel sauce that we added between the two layers of batter. That is because the caramel melted into the batter.
  • The purpose of baking with the foil first is so the inside of the loaf can cook thoroughly before removing the foil and browning the top. 
  • Store the banana bread in a container or box (not a plastic bag, as the caramel sauce will stick to the top) in the refrigerator for up to 4 days.
  • *I used Sweet Simple Vegan’s Homemade Vegan Caramel , but if you already have caramel sauce, you can use your own!
